Food, yum (annnd some exercise thrown in)

I am continuing to enjoy my adventures in the kitchen - definitely one of my favorite parts of my role in our marriage so far, even if I am not as much a fan of washing the dishes. :-)

Last week, I made Shrimp Veracruzana for myself, which was a tasty mix of shrimp, tomatoes, and other flavors, while the husband was out in the field (he doesn't like shrimp, or really any seafood). I'm using his time out in the field to get my fill of the things he doesn't like as much! For the night he got home, I made Cayenne-Rubbed Chicken with Avocado Salsa, which turned out well, and last night I threw together some bean enchiladas based on a Rachael Ray recipe for chicken enchiladas, and paired it with Pioneer Woman's pico de gallo recipe, and hubby made some delicious cornbread. It was a feast!

I just tentatively did up a menu for this week, though it might well change based on work schedules and plans:

Monday: Lighter General Tso's Chicken
Tuesday: Pioneer Woman's Penne a la Betsy (this involves shrimp once again)
Wed: Leftovers
Thursday: Quesadillas or other, depending what we have
Friday: Seared Flat-Iron Steaks with Wine Sauce, Broccoli and Mashed Potatoes
Saturday: Chicken Schnitzel and Pasta (with veggies)

Last night we didn't feel guilty about our feasting, luckily, because we managed to do some pretty serious exercise in the morning! We found a way to do physical activity that allows us to actually go together AND gets hubs a good workout without killing me - he walks with 65 pounds on his back (which he actually does do at work), and I walk with 0 pounds on my back! We went almost 7 miles at what turned out to be a 15-minute mile pace, and we were both challenged. My fitness is obviously nowhere near his, but it's all relative, and it was fun to do something together. Sadly, I never run with him, because I am not a runner at all, though I know it would be fun if I were better and could run with him. Anyway, we felt good about our morning exercise, found a new park in town to explore, and got to relax for the rest of the day, guilt-free! 

Time to go run a few errands and work on getting us both ready for the week ahead. Hope everyone has had a wonderful weekend!
